  • Carrot - 50 grams, julienned
  • Cucumber - 50 grams, thinly sliced
  • Fresh mint leaves - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Red chili - 1 small, thinly sliced
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Stevia or erythritol - 1 teaspoon (optional for sweetness)
  • Garlic - 1 clove, minced
  • Black pepper - to taste
  • Sesame oil - 1 teaspoon

Steps

  1. Bring a pot of water to a boil. Add the squid rings and cook for 2-3 minutes until just opaque. Drain and rinse under cold water to stop cooking.
  2. In a large mixing bowl, combine the shredded cabbage, julienned carrot, sliced cucumber, chopped mint, chopped cilantro, and sliced red chili.
  3. In a small bowl, whisk together the lime juice, fish sauce, minced garlic, stevia (if using), and black pepper to create the dressing.
  4. Add the cooked squid to the bowl of vegetables and pour the dressing over the top. Toss well to combine all ingredients evenly.
  5. Drizzle the sesame oil over the salad and give it one last gentle toss.
