Ingredients

  • Banana flower - 200 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, julienned
  • Fresh mint leaves - 20 grams
  • Fresh coriander leaves - 20 grams
  • Peanuts - 30 grams, crushed
  • Lime juice - 2 tablespoons
  • Sugar - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Salt - to taste

Steps

  1. Prepare the banana flower by removing the outer petals and cutting the inner part into thin slices. Soak the sliced banana flower in water with a little salt and lime juice for about 10 minutes to reduce bitterness.
  2. In a mixing bowl, combine the julienned carrot and cucumber. Drain the banana flower and add it to the bowl.
  3. Chop the fresh mint and coriander leaves, then add them to the mixture along with the crushed peanuts.
  4. In a small bowl, whisk together lime juice, sugar, soy sauce, chili flakes, and salt to create the dressing.
  5. Pour the dressing over the salad mixture and toss gently until everything is well coated.
  6. Serve immediately, garnishing with extra crushed peanuts and herbs on top.
