  • Soy sauce - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Spring onions - 2, chopped
  • Salt - to taste

Steps

  1. Soak the wood ear mushrooms in warm water for about 10 minutes until softened, then drain and slice them into strips.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the julienned carrot and sliced bell pepper to the pan, stirring frequently for about 3 minutes until they start to soften.
  5. Add the sliced wood ear mushrooms to the skillet, followed by the soy sauce and black pepper. Stir well to combine.
  6. Cook for an additional 3-4 minutes, allowing the mushrooms to absorb the flavors and the vegetables to become tender.
  7. Taste and adjust seasoning with salt if necessary, then remove from heat.
  8. Garnish with chopped spring onions before serving.
