Ingredients

  • Rice vermicelli noodles - 100 grams
  • Cabbage - 100 grams, shredded
  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, julienned
  • Fresh mint - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Peanuts - 20 grams, crushed
  • Chili pepper - 1 small, sliced (optional)
  • Sesame oil - 1 tablespoon

Steps

  1. In a bowl, mix soy sauce, fish sauce, lime juice, minced garlic, honey, and black pepper to create the marinade.
  2. Slice the chicken breast into thin strips and add them to the marinade. Let it sit for at least 15 minutes.
  3. While the chicken is marinating, cook the rice vermicelli noodles according to package instructions. Drain and set aside.
  4. Preheat a grill or grill pan over medium heat. Grill the marinated chicken strips for about 6-8 minutes, turning occasionally, until fully cooked and slightly charred.
  5. In a large bowl, combine the cooked rice noodles, shredded cabbage, julienned carrot, julienned cucumber, chopped mint, and cilantro. Toss them together gently.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing it into bite-sized pieces.
  7. Add the grilled chicken to the salad mixture, drizzle with sesame oil, and toss everything together.
  8. Serve the salad in bowls, topped with crushed peanuts and sliced chili pepper, if desired.
