- Peanuts - 20 grams, crushed
- Chili pepper - 1 small, sliced (optional)
- Sesame oil - 1 tablespoon
Steps
- In a bowl, mix soy sauce, fish sauce, lime juice, minced garlic, honey, and black pepper to create the marinade.
- Slice the chicken breast into thin strips and add them to the marinade. Let it sit for at least 15 minutes.
- While the chicken is marinating, cook the rice vermicelli noodles according to package instructions. Drain and set aside.
- Preheat a grill or grill pan over medium heat. Grill the marinated chicken strips for about 6-8 minutes, turning occasionally, until fully cooked and slightly charred.
- In a large bowl, combine the cooked rice noodles, shredded cabbage, julienned carrot, julienned cucumber, chopped mint, and cilantro. Toss them together gently.
