  • Red bell pepper, thinly sliced - 1/2 medium (about 75 grams)
  • Fresh cilantro, chopped - 30 grams
  • Fresh mint, chopped - 30 grams
  • Roasted peanuts, crushed - 30 grams
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic, minced - 1 clove
  • Red chili, thinly sliced (optional) - 1 small

Steps

  1. In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and red chili (if using) to create the dressing.
  2. In a large bowl, combine the shredded chicken, julienned carrot, cucumber, red bell pepper, cilantro, and mint.
  3. Pour the dressing over the salad and toss well to combine all the ingredients evenly.
  4. Let the salad sit for about 5 minutes to allow the flavors to meld.
