  • Fish sauce - 15 ml
  • Erythritol (or preferred low-carb sweetener) - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Wash and peel the daikon radish and carrot. Julienne them into thin strips.
  2. Slice the red bell pepper into thin strips.
  3. In a bowl, combine the julienned daikon, carrot, and red bell pepper.
  4. In a separate bowl, mix the rice vinegar, fish sauce, erythritol, chili flakes, salt, and black pepper until the erythritol is dissolved.
  5. Pour the dressing over the vegetables and toss well to combine.
  6. Let the mixture marinate for at least 10 minutes to enhance the flavors.
  7. Before serving, chop the fresh cilantro and sprinkle it over the salad.
