Steps
- Wash and peel the daikon radish and carrot. Julienne them into thin strips.
- Slice the red bell pepper into thin strips.
- In a bowl, combine the julienned daikon, carrot, and red bell pepper.
- In a separate bowl, mix the rice vinegar, fish sauce, erythritol, chili flakes, salt, and black pepper until the erythritol is dissolved.
- Pour the dressing over the vegetables and toss well to combine.
- Let the mixture marinate for at least 10 minutes to enhance the flavors.
- Before serving, chop the fresh cilantro and sprinkle it over the salad.
