Ingredients

  • Red cabbage - 50g, thinly sliced
  • Fresh mint leaves - 15g, chopped
  • Cilantro - 15g, chopped
  • Lime juice - 30ml
  • Soy sauce - 15ml
  • Sesame oil - 10ml
  • Peanut butter - 15g
  • Chili flakes - 1g, optional
  • Roasted peanuts - 20g, crushed for garnish

Steps

  1. In a large bowl, combine the julienned carrots, cucumber, red bell pepper, and red cabbage.
  2. In a small bowl, whisk together the lime juice, soy sauce, sesame oil, peanut butter, and chili flakes until smooth.
  3. Pour the dressing over the vegetable mixture and toss well to coat evenly.
  4. Add the chopped mint and cilantro, and toss again gently.
  5. Let the salad sit for about 5 minutes for the flavors to meld.
  6. Serve in bowls, garnished with crushed roasted peanuts on top.
