Steps
- Start by cleaning the lotus root thoroughly, then slice it into thin rounds (about 3-5 mm thick).
- In a pot of boiling water, blanch the lotus root slices for about 2-3 minutes until just tender but still crunchy. Drain and immediately immerse in cold water to stop the cooking process.
- Once cooled, drain the lotus root and place it in a large mixing bowl.
- Add the julienned carrot, cucumber, red bell pepper, chopped cilantro, mint, and chili pepper to the bowl with the lotus root.
- In a small bowl, whisk together the rice vinegar, fish sauce, sugar, and lime juice until the sugar dissolves.
- Pour the dressing over the salad ingredients and toss gently to combine, ensuring everything is well coated.
- Let the salad sit for about 5 minutes to allow the flavors to meld.
- Serve the salad in bowls, garnished with crushed peanuts on top.
