  • Fresh mint - 20 grams, chopped
  • Chili pepper - 1 small, thinly sliced (optional)
  • Rice vinegar - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Peanuts - 30 grams, crushed for garnish

Steps

  1. Start by cleaning the lotus root thoroughly, then slice it into thin rounds (about 3-5 mm thick).
  2. In a pot of boiling water, blanch the lotus root slices for about 2-3 minutes until just tender but still crunchy. Drain and immediately immerse in cold water to stop the cooking process.
  3. Once cooled, drain the lotus root and place it in a large mixing bowl.
  4. Add the julienned carrot, cucumber, red bell pepper, chopped cilantro, mint, and chili pepper to the bowl with the lotus root.
  5. In a small bowl, whisk together the rice vinegar, fish sauce, sugar, and lime juice until the sugar dissolves.
  6. Pour the dressing over the salad ingredients and toss gently to combine, ensuring everything is well coated.
  7. Let the salad sit for about 5 minutes to allow the flavors to meld.
  8. Serve the salad in bowls, garnished with crushed peanuts on top.
