Ingredients

  • Rice noodles - 150 grams
  • Firm tofu - 200 grams, diced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Snow peas - 100 grams, trimmed
  • Green onion - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Soy sauce (kosher) - 3 tablespoons
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the rice noodles in hot water for 15 minutes until softened, then drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat.
  3. Add the diced tofu to the pan and fry until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  4. In the same pan, add minced garlic and sauté for 30 seconds until fragrant.
  5. Add the julienned carrot, sliced bell pepper, and snow peas to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  6. Return the fried tofu to the pan, then add the soaked rice noodles, soy sauce, sesame oil, salt, and black pepper. Toss everything together and stir-fry for another 2-3 minutes until heated through.
  7. Remove from heat, garnish with chopped green onions, and serve warm.
