Ingredients
- Rice noodles - 150 grams
- Firm tofu - 200 grams, diced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Snow peas - 100 grams, trimmed
- Green onion - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Soy sauce (kosher) - 3 tablespoons
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the rice noodles in hot water for 15 minutes until softened, then drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat.
- Add the diced tofu to the pan and fry until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same pan, add minced garlic and sauté for 30 seconds until fragrant.
- Add the julienned carrot, sliced bell pepper, and snow peas to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the fried tofu to the pan, then add the soaked rice noodles, soy sauce, sesame oil, salt, and black pepper. Toss everything together and stir-fry for another 2-3 minutes until heated through.
- Remove from heat, garnish with chopped green onions, and serve warm.
