- Rice noodles - 150 grams
- Chicken breast - 200 grams, boneless and skinless
- Chicken stock - 500 ml (kosher)
- Turmeric powder - 1 teaspoon
- Garlic - 2 cloves, minced
- Shallots - 2, thinly sliced
- Vegetable oil - 2 tablespoons
- Fish sauce - 1 tablespoon (kosher)
- Brown sugar - 1 teaspoon
- Lime - 1, cut into wedges
- Fresh cilantro - 20 grams, chopped
- Green onions - 2, sliced
- Peanuts - 30 grams, crushed
- Bean sprouts - 50 grams
- Red chili - 1, sliced (optional)
Steps
- In a pot, heat the vegetable oil over medium heat. Add the minced garlic and sliced shallots, sauté until fragrant and golden brown.
- Add the chicken breast to the pot, and sprinkle with turmeric powder. Cook until the chicken is no longer pink, about 5-7 minutes.
- Pour in the chicken stock, fish sauce, and brown sugar. Bring to a boil, then reduce heat and let simmer for 20 minutes until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir to combine.
- While the broth simmers, cook the rice noodles according to package instructions. Drain and set aside.
- To serve, divide the cooked noodles into two bowls. Ladle the chicken and broth mixture over the noodles.
- Garnish with fresh cilantro, sliced green onions, crushed peanuts, bean sprouts, and red chili if desired. Serve with lime wedges on the side.
