Ingredients

  • Rice noodles - 150 grams
  • Chicken breast - 200 grams, boneless and skinless
  • Chicken stock - 500 ml (kosher)
  • Turmeric powder - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Shallots - 2, thinly sliced
  • Vegetable oil - 2 tablespoons
  • Fish sauce - 1 tablespoon (kosher)
  • Brown sugar - 1 teaspoon
  • Lime - 1, cut into wedges
  • Fresh cilantro - 20 grams, chopped
  • Green onions - 2, sliced
  • Peanuts - 30 grams, crushed
  • Bean sprouts - 50 grams
  • Red chili - 1, sliced (optional)

Steps

  1. In a pot, heat the vegetable oil over medium heat. Add the minced garlic and sliced shallots, sauté until fragrant and golden brown.
  2. Add the chicken breast to the pot, and sprinkle with turmeric powder. Cook until the chicken is no longer pink, about 5-7 minutes.
  3. Pour in the chicken stock, fish sauce, and brown sugar. Bring to a boil, then reduce heat and let simmer for 20 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir to combine.
  5. While the broth simmers, cook the rice noodles according to package instructions. Drain and set aside.
  6. To serve, divide the cooked noodles into two bowls. Ladle the chicken and broth mixture over the noodles.
  7. Garnish with fresh cilantro, sliced green onions, crushed peanuts, bean sprouts, and red chili if desired. Serve with lime wedges on the side.
