- Rice noodles - 200 grams
- Chicken breast - 150 grams, sliced
- Shrimp - 100 grams, peeled and deveined
- Eggs - 2, beaten
- Bell pepper - 1, sliced
- Carrot - 1, julienned
- Snow peas - 100 grams
- Garlic - 3 cloves, minced
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the rice noodles in warm water for 15 minutes until softened, then drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the sliced chicken breast to the pan and cook until no longer pink, about 5 minutes.
- Add the shrimp to the pan and cook until they turn pink, about 2-3 minutes. Remove the chicken and shrimp from the pan and set aside.
- In the same pan, add the beaten eggs and scramble until fully cooked. Remove and set aside with the chicken and shrimp.
- Add the bell pepper, carrot, and snow peas to the pan. Stir-fry for about 3-4 minutes until vegetables are tender-crisp.
- Add the soaked rice noodles back into the pan along with the chicken, shrimp, scrambled eggs, soy sauce, oyster sauce, sesame oil, and season with salt and black pepper.
- Toss everything together and stir-fry for another 2-3 minutes until heated through.
- Garnish with chopped green onions and serve hot.
