Ingredients

  • Rice noodles - 200 grams
  • Shrimp - 150 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Mussels - 100 grams, cleaned
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, cut into wedges for serving

Steps

  1. Soak the rice noodles in warm water for about 15 minutes until softened, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the shrimp, squid, and mussels to the skillet. Cook for 3-4 minutes until the seafood is cooked through and opaque. Remove seafood from the pan and set aside.
  4. In the same skillet, add bell pepper and carrot. Stir-fry for about 2-3 minutes until they are slightly tender.
  5. Add the soaked rice noodles to the skillet along with the cooked seafood. Pour in soy sauce, oyster sauce, and sesame oil. Toss everything together to combine thoroughly, cooking for another 2-3 minutes.
  6. Add chopped green onions, and season with salt and black pepper to taste. Mix well and cook for an additional 1 minute.
  7. Serve hot with lime wedges on the side for squeezing over the dish.
