- Shirataki noodles - 200 grams
- Chicken breast - 150 grams, sliced
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, julienned
- Carrot - 1 medium, julienned
- Garlic - 2 cloves, minced
- Soy sauce (low sodium) - 2 tablespoons
- Fish sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Green onions - 2 stalks, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Rinse the Shirataki noodles under cold water for 2-3 minutes, then drain and set aside.
- In a large skillet or wok, heat olive oil over medium-high heat.
- Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add the bell pepper, zucchini, and carrot to the skillet. Stir-fry for an additional 3-5 minutes until the vegetables are tender.
- Add the Shirataki noodles, soy sauce, fish sauce, and sesame oil to the skillet. Toss everything together and cook for another 2-3 minutes until heated through.
- Remove from heat and stir in the chopped green onions and cilantro.
- Serve hot with lime wedges on the side for squeezing over the dish.
