- Rice noodles - 200 grams
- Mushrooms (shiitake or oyster) - 100 grams, sliced
- Carrot - 1 medium, julienned
- Daikon radish - 100 grams, julienned
- Baby bok choy - 100 grams, halved
- Vegetable broth - 1 liter
- Soy sauce - 2 tablespoons
- Miso paste - 1 tablespoon
- Ginger - 1 inch piece, sliced
- Garlic - 3 cloves, minced
- Star anise - 2 pieces
- Cinnamon stick - 1 piece
- Green onions - 2 stalks, chopped
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Chili pepper - 1, sliced (optional)
- Sesame oil - 1 tablespoon
Steps
- In a pot, heat sesame oil over medium heat. Add minced garlic and sliced ginger, sautéing until fragrant.
- Add mushrooms, carrot, and daikon radish to the pot, stirring for about 5 minutes until they start to soften.
- Pour in the vegetable broth, soy sauce, miso paste, star anise, and cinnamon stick. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
- While the broth simmers, cook the rice noodles according to package instructions, then drain and set aside.
- After 10 minutes, add baby bok choy to the broth and cook for an additional 2-3 minutes until just tender.
- Remove the star anise and cinnamon stick from the broth. Taste and adjust seasoning if needed.
- To serve, place cooked rice noodles in bowls, ladle the hot broth and vegetables over the noodles, and garnish with green onions, cilantro, lime wedges, and chili pepper if desired.
