Steps
- Start by preparing the young jackfruit; if using canned, rinse and drain it, then shred it into small pieces.
- In a large mixing bowl, combine the shredded jackfruit, julienned carrot, and cucumber.
- In a small bowl, whisk together lime juice, soy sauce, chili paste, and sesame oil to create the dressing.
- Pour the dressing over the jackfruit mixture and toss gently to combine all the ingredients evenly.
- Add in the chopped mint and coriander, and mix well.
- Season with salt to taste, then let the mixture sit for 5 minutes to allow flavors to meld.
