- Rice noodles - 150 grams
- Shrimp, peeled and deveined - 200 grams
- Chicken breast, diced - 150 grams
- Fish sauce - 3 tablespoons
- Tamarind paste - 2 tablespoons
- Garlic, minced - 3 cloves
- Ginger, grated - 1 tablespoon
- Water - 1.5 liters
- Vegetable oil - 1 tablespoon
- Green onions, chopped - 2 stalks
- Cilantro, chopped - 1/4 cup
- Lime, juiced - 1
- Chili, sliced - 1 (optional)
- Salt - to taste
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1-2 minutes.
- Add the diced chicken breast to the pot and cook until browned and cooked through, about 5-7 minutes.
- Pour in the water and bring to a boil. Once boiling, reduce heat to a simmer and add the fish sauce and tamarind paste, stirring well to combine.
- Add the shrimp and continue to simmer for another 5 minutes until the shrimp is pink and cooked through.
- While the soup is simmering, cook the rice noodles according to the package instructions, then drain and set aside.
- To serve, divide the cooked noodles into two bowls. Ladle the hot soup over the noodles.
- Garnish with chopped green onions, cilantro, lime juice, and sliced chili if desired. Adjust salt to taste.
