Ingredients

  • Rice noodles - 150 grams
  • Shrimp, peeled and deveined - 200 grams
  • Chicken breast, diced - 150 grams
  • Fish sauce - 3 tablespoons
  • Tamarind paste - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Ginger, grated - 1 tablespoon
  • Water - 1.5 liters
  • Vegetable oil - 1 tablespoon
  • Green onions, chopped - 2 stalks
  • Cilantro, chopped - 1/4 cup
  • Lime, juiced - 1
  • Chili, sliced - 1 (optional)
  • Salt - to taste

Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1-2 minutes.
  2. Add the diced chicken breast to the pot and cook until browned and cooked through, about 5-7 minutes.
  3. Pour in the water and bring to a boil. Once boiling, reduce heat to a simmer and add the fish sauce and tamarind paste, stirring well to combine.
  4. Add the shrimp and continue to simmer for another 5 minutes until the shrimp is pink and cooked through.
  5. While the soup is simmering, cook the rice noodles according to the package instructions, then drain and set aside.
  6. To serve, divide the cooked noodles into two bowls. Ladle the hot soup over the noodles.
  7. Garnish with chopped green onions, cilantro, lime juice, and sliced chili if desired. Adjust salt to taste.
