- Green onions - 2, chopped
- Coriander - a handful, chopped
- Lime - 1, cut into wedges

Steps
- Cook the rice noodles according to package instructions, then drain and rinse under cold water to prevent sticking.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent.
- Add the halal shrimp to the skillet, cooking until they turn pink and opaque, about 3-4 minutes.
- Stir in the fish sauce, soy sauce, and chili paste, mixing well to combine. Allow the sauce to simmer for 2 minutes.
- Add the cooked rice noodles to the skillet, tossing everything together gently until the noodles are evenly coated with the sauce.
- Season with salt and pepper to taste, and remove from heat.
- Garnish with chopped green onions and coriander before serving. Serve with lime wedges on the side.
