Ingredients
- Fresh coconut - 200 grams, grated
- Granulated sugar - 100 grams
- Water - 50 ml
- Salt - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
- Food coloring (optional) - a few drops
Steps
- In a medium saucepan, combine the grated coconut, sugar, water, salt, and vanilla extract.
- Cook over medium heat, stirring continuously until the sugar has dissolved and the mixture begins to thicken, about 10-15 minutes.
- Reduce the heat to low and continue to cook, stirring frequently, until the mixture becomes sticky and begins to pull away from the sides of the pan, about 20-25 minutes.
- If using food coloring, add it during the last 5 minutes of cooking and stir until evenly distributed.
- Remove the mixture from heat and spread it evenly onto a greased baking sheet or tray.
- Allow to cool completely, then cut into small pieces or shapes as desired.
