- Rice noodles - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Broccoli - 100 grams, cut into small florets
- Soy sauce - 3 tablespoons
- Vegetarian oyster sauce - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chili flakes - 1/2 teaspoon (optional)
- Fresh coriander - for garnish
Steps
- Boil a pot of water and cook the rice noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, and sauté for 2-3 minutes until fragrant.
- Add the sliced bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Add the cooked rice noodles to the skillet along with the soy sauce, vegetarian oyster sauce, salt, black pepper, and chili flakes (if using). Toss everything together until well combined and heated through, about 3-4 minutes.
- Remove from heat, garnish with fresh coriander, and serve warm.
