Ingredients

  • Zucchini - 2 medium, spiralized into noodles
  • Chicken breast - 200 grams, thinly sliced
  • Coconut oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Chicken broth - 500 ml, low-sodium
  • Coconut milk - 100 ml, unsweetened
  • Fish sauce - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 1/4 cup, chopped
  • Spring onions - 2, chopped
  • Lime - 1, cut into wedges
  • Chili pepper - 1, sliced (optional)

Steps

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add minced garlic and sliced shallots, sauté until fragrant and slightly golden.
  3. Add the sliced chicken breast to the skillet and cook until browned and fully cooked, about 5-7 minutes.
  4. Stir in turmeric powder and black pepper, mixing well to coat the chicken.
  5. Pour in the chicken broth and bring to a simmer for about 10 minutes.
  6. Add the coconut milk and fish sauce, stirring until well combined.
  7. Reduce the heat and let it simmer for an additional 5 minutes to thicken slightly.
  8. In a separate pot, quickly blanch the spiralized zucchini noodles in boiling water for 1-2 minutes until just tender, then drain.
  9. To serve, place a portion of zucchini noodles in a bowl and ladle the chicken broth mixture over the top.
  10. Garnish with fresh cilantro, spring onions, lime wedges, and sliced chili pepper if desired.
