Ingredients

  • Rice noodles - 200 grams
  • Chicken breast - 200 grams
  • Chicken stock - 500 ml
  • Turmeric powder - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Vegetable oil - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Green onions - 2, sliced
  • Roasted peanuts - 50 grams, crushed
  • Bean sprouts - 100 grams
  • Lettuce leaves - 2, shredded
  • Chili peppers - 1, sliced (optional)

Steps

  1. In a pot, heat vegetable oil over medium heat. Add minced garlic and sliced shallots, sauté until fragrant.
  2. Add the chicken breast and cook until lightly browned on all sides, about 5 minutes.
  3. Stir in turmeric powder and cook for another minute to release the flavor.
  4. Pour in the chicken stock and add fish sauce. Bring to a boil, then reduce heat and simmer for 15 minutes until chicken is cooked through.
  5. Remove the chicken, shred it using two forks, and return it to the pot.
  6. In the meantime, cook the rice noodles according to package instructions, then drain and set aside.
  7. To serve, divide the noodles into bowls, ladle the chicken broth over the top, and garnish with shredded lettuce, bean sprouts, cilantro, green onions, crushed peanuts, and chili peppers if desired.
  8. Finish with a squeeze of lime juice before enjoying.
