- Rice noodles - 200 grams
- Chicken breast - 200 grams
- Chicken stock - 500 ml
- Turmeric powder - 1 teaspoon
- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Vegetable oil - 2 tablespoons
- Fish sauce - 2 tablespoons
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Green onions - 2, sliced
- Roasted peanuts - 50 grams, crushed
- Bean sprouts - 100 grams
- Lettuce leaves - 2, shredded
- Chili peppers - 1, sliced (optional)
Steps
- In a pot, heat vegetable oil over medium heat. Add minced garlic and sliced shallots, sauté until fragrant.
- Add the chicken breast and cook until lightly browned on all sides, about 5 minutes.
- Stir in turmeric powder and cook for another minute to release the flavor.
- Pour in the chicken stock and add fish sauce. Bring to a boil, then reduce heat and simmer for 15 minutes until chicken is cooked through.
- Remove the chicken, shred it using two forks, and return it to the pot.
- In the meantime, cook the rice noodles according to package instructions, then drain and set aside.
- To serve, divide the noodles into bowls, ladle the chicken broth over the top, and garnish with shredded lettuce, bean sprouts, cilantro, green onions, crushed peanuts, and chili peppers if desired.
- Finish with a squeeze of lime juice before enjoying.
