- Rice noodles - 100 grams
- Shrimp - 150 grams, peeled and deveined
- Chicken breast - 100 grams, thinly sliced
- Chicken broth - 500 ml
- Turmeric powder - 1 teaspoon
- Garlic - 2 cloves, minced
- Shallots - 2, sliced
- Lime - 1, cut into wedges
- Cilantro - 20 grams, chopped
- Mint leaves - 20 grams, chopped
- Bean sprouts - 50 grams
- Peanuts - 30 grams, crushed
- Fish sauce - 1 tablespoon
- Chili sauce - to taste
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the rice noodles in warm water for 20 minutes or until soft, then drain and set aside.
- In a pot, heat a small amount of oil and sauté the minced garlic and sliced shallots until fragrant.
- Add the sliced chicken breast and shrimp to the pot, cooking until they are no longer pink.
- Stir in the turmeric powder, salt, and black pepper, then add the chicken broth. Bring to a simmer.
- Once the broth is simmering, add the soaked rice noodles and cook for another 3-5 minutes until heated through.
- Stir in the fish sauce and adjust seasoning as needed.
- To serve, divide the noodles and broth into two bowls. Top with bean sprouts, chopped cilantro, mint leaves, crushed peanuts, and a wedge of lime.
- Add chili sauce to taste before enjoying your Mì Quảng.
