Ingredients

  • Rice noodles - 100 grams
  • Shrimp - 150 grams, peeled and deveined
  • Chicken breast - 100 grams, thinly sliced
  • Chicken broth - 500 ml
  • Turmeric powder - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Shallots - 2, sliced
  • Lime - 1, cut into wedges
  • Cilantro - 20 grams, chopped
  • Mint leaves - 20 grams, chopped
  • Bean sprouts - 50 grams
  • Peanuts - 30 grams, crushed
  • Fish sauce - 1 tablespoon
  • Chili sauce - to taste
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the rice noodles in warm water for 20 minutes or until soft, then drain and set aside.
  2. In a pot, heat a small amount of oil and sauté the minced garlic and sliced shallots until fragrant.
  3. Add the sliced chicken breast and shrimp to the pot, cooking until they are no longer pink.
  4. Stir in the turmeric powder, salt, and black pepper, then add the chicken broth. Bring to a simmer.
  5. Once the broth is simmering, add the soaked rice noodles and cook for another 3-5 minutes until heated through.
  6. Stir in the fish sauce and adjust seasoning as needed.
  7. To serve, divide the noodles and broth into two bowls. Top with bean sprouts, chopped cilantro, mint leaves, crushed peanuts, and a wedge of lime.
  8. Add chili sauce to taste before enjoying your Mì Quảng.
