  • Chili pepper - 1, sliced (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sliced shallots, sautéing until fragrant, about 1-2 minutes.
  3. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  4. Stir in the sliced loofah squash and cook for another 5-7 minutes until tender but still crisp.
  5. Season with fish sauce, black pepper, and salt to taste.
  6. If desired, add sliced chili pepper for a bit of heat.
  7. Remove from heat and garnish with fresh cilantro before serving.
