Steps

  1. Wash the bitter melon thoroughly, cut it in half lengthwise, and remove the seeds. Slice it into thin crescent shapes.
  2. Sprinkle the sliced bitter melon with salt and let it sit for about 10 minutes to reduce bitterness, then rinse with water and drain.
  3. In a pan, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant and the onion is translucent.
  4. Add the prepared bitter melon to the pan and stir-fry for about 3-4 minutes, until slightly softened.
  5. In a bowl, beat the eggs and season with black pepper. Pour the beaten eggs over the stir-fried bitter melon in the pan.
  6. Gently stir to combine, allowing the eggs to cook evenly with the bitter melon for about 2-3 minutes until the eggs are set but still moist.
