Steps
- Wash the bitter melon thoroughly, cut it in half lengthwise, and remove the seeds. Slice it into thin crescent shapes.
- Sprinkle the sliced bitter melon with salt and let it sit for about 10 minutes to reduce bitterness, then rinse with water and drain.
- In a pan, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant and the onion is translucent.
- Add the prepared bitter melon to the pan and stir-fry for about 3-4 minutes, until slightly softened.
- In a bowl, beat the eggs and season with black pepper. Pour the beaten eggs over the stir-fried bitter melon in the pan.
