Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced bamboo shoots, carrots, and red bell pepper to the skillet.
- Stir-fry the vegetables for 5-7 minutes until they begin to soften.
- Pour in the sesame oil and coconut aminos, then add salt and black pepper.
- Continue to stir-fry for another 3-4 minutes until all ingredients are well combined and heated through.
- Garnish with chopped green onions before serving.
