Ingredients

  • Bamboo shoots - 200 grams, sliced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced bamboo shoots, carrots, and red bell pepper to the skillet.
  4. Stir-fry the vegetables for 5-7 minutes until they begin to soften.
  5. Pour in the sesame oil and coconut aminos, then add salt and black pepper.
  6. Continue to stir-fry for another 3-4 minutes until all ingredients are well combined and heated through.
  7. Garnish with chopped green onions before serving.
