Ingredients

  • Fresh squid - 300 grams
  • Vegetable oil - 2 tablespoons

  • Shallots - 2, thinly sliced
  • Red bell pepper - 1, sliced
  • Green bell pepper - 1, sliced
  • Carrot - 1 small, julienned
  • Fermented soybean paste (Tương) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Spring onions - 2, chopped
  • Cilantro - for garnish

Steps

  1. Clean and prepare the squid by removing the skin and internal organs. Cut the squid into rings or bite-sized pieces.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the minced garlic and sliced shallots to the pan, sautéing for about 1-2 minutes until fragrant.
  4. Add the squid pieces to the skillet, cooking for about 3-4 minutes until they turn opaque.
  5. Stir in the red and green bell peppers and carrot, cooking for an additional 2-3 minutes until the vegetables start to soften.
  6. Add the fermented soybean paste, soy sauce, and black pepper, mixing well to coat the squid and vegetables.
  7. Cook for another 2-3 minutes until everything is well combined and heated through.
  8. Remove from heat and garnish with chopped spring onions and cilantro before serving.
