Steps

  1. Heat the cooking oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and ginger, stirring until fragrant, about 30 seconds.
  3. Increase the heat to high and add the sliced squid, stirring quickly to avoid overcooking.
  4. After 2-3 minutes, when the squid is opaque, add the chopped green onions and red chili (if using).
  5. Stir in the fish sauce, soy sauce, and black pepper, cooking for an additional 2 minutes.
  6. Remove from heat and serve immediately with lime wedges on the side.
