- Fish sauce (kosher) - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon

Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the ground beef, chopped shallots, minced garlic, grated carrot, chopped cilantro, fish sauce, black pepper, and salt. Mix well until all ingredients are evenly incorporated.
- Stuff each cleaned squid with the meat mixture, taking care not to overfill as the meat will expand while cooking. Secure the openings with toothpicks.
- Heat olive oil in a skillet over medium heat. Sear the stuffed squid for about 3-4 minutes on each side until browned.
- Transfer the seared squid to a baking dish and bake in the preheated oven for 20 minutes, or until the meat is cooked through.
- Remove from the oven and let it rest for a few minutes before serving. Serve with lime wedges for squeezing over the stuffed squid.
