  • Ground beef (kosher) - 100 grams
  • Shallots (finely chopped) - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Carrot (grated) - 1 tablespoon
  • Cilantro (chopped) - 1 tablespoon
  • Fish sauce (kosher) - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Lime (for serving) - 1

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the ground beef, chopped shallots, minced garlic, grated carrot, chopped cilantro, fish sauce, black pepper, and salt. Mix well until all ingredients are evenly incorporated.
  3. Stuff each cleaned squid with the meat mixture, taking care not to overfill as the meat will expand while cooking. Secure the openings with toothpicks.
  4. Heat olive oil in a skillet over medium heat. Sear the stuffed squid for about 3-4 minutes on each side until browned.
  5. Transfer the seared squid to a baking dish and bake in the preheated oven for 20 minutes, or until the meat is cooked through.
  6. Remove from the oven and let it rest for a few minutes before serving. Serve with lime wedges for squeezing over the stuffed squid.
