  • Bird's eye chili - 1 (finely chopped, adjust for spice)
  • Fish sauce - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Fresh coriander - for garnish

Steps

  1. Clean the squid thoroughly, removing the innards and skin, then cut into rings or leave whole.
  2. In a bowl, combine the finely chopped lemongrass, minced garlic, chopped bird's eye chili, fish sauce, vegetable oil, brown sugar, lime juice, and a pinch of salt to create the marinade.
  3. Add the cleaned squid to the marinade, ensuring it's fully coated. Cover the bowl and let it marinate in the refrigerator for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Skewer the marinated squid onto skewers for easier grilling, if desired.
  6. Grill the squid for about 2-3 minutes on each side, or until they are cooked through and have nice grill marks.
  7. Remove from the grill and garnish with fresh coriander before serving.
