Steps
- Clean the squid thoroughly, removing the innards and skin, then cut into rings or leave whole.
- In a bowl, combine the finely chopped lemongrass, minced garlic, chopped bird's eye chili, fish sauce, vegetable oil, brown sugar, lime juice, and a pinch of salt to create the marinade.
- Add the cleaned squid to the marinade, ensuring it's fully coated. Cover the bowl and let it marinate in the refrigerator for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Skewer the marinated squid onto skewers for easier grilling, if desired.
