- Lime juice - 2 tablespoons
- Cilantro (chopped) - 2 tablespoons
- Salt - to taste
- Dipping sauce ingredients:
- Soy sauce - 2 tablespoons
- Sriracha - 1 teaspoon
- Sugar substitute (like erythritol) - 1 teaspoon
Steps
- In a bowl, combine minced garlic, chopped lemongrass, fish sauce, olive oil, chili powder, black pepper, and salt to create the marinade.
- Add the cleaned squid to the marinade, ensuring it is well coated. Let it marinate for at least 15 minutes.
- While the squid is marinating, prepare the dipping sauce by mixing soy sauce, Sriracha, and sugar substitute in a small bowl. Set aside.
- Preheat a grill or grill pan over medium-high heat.
- Once the grill is hot, skewer the marinated squid or place it directly on the grill.
- Grill the squid for about 3-4 minutes on each side, or until it is cooked through and has nice grill marks.
- Remove the squid from the grill and squeeze fresh lime juice over it.
- Garnish with chopped cilantro and serve immediately with the dipping sauce on the side.
