  • Chili powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime juice - 2 tablespoons
  • Cilantro (chopped) - 2 tablespoons
  • Salt - to taste
  • Dipping sauce ingredients:
  • Soy sauce - 2 tablespoons
  • Sriracha - 1 teaspoon
  • Sugar substitute (like erythritol) - 1 teaspoon

Steps

  1. In a bowl, combine minced garlic, chopped lemongrass, fish sauce, olive oil, chili powder, black pepper, and salt to create the marinade.
  2. Add the cleaned squid to the marinade, ensuring it is well coated. Let it marinate for at least 15 minutes.
  3. While the squid is marinating, prepare the dipping sauce by mixing soy sauce, Sriracha, and sugar substitute in a small bowl. Set aside.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Once the grill is hot, skewer the marinated squid or place it directly on the grill.
  6. Grill the squid for about 3-4 minutes on each side, or until it is cooked through and has nice grill marks.
  7. Remove the squid from the grill and squeeze fresh lime juice over it.
  8. Garnish with chopped cilantro and serve immediately with the dipping sauce on the side.
