  • Lemon juice - 1 tablespoon
  • Fish sauce - 2 tablespoons (ensure Halal certified)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coriander leaves - for garnish

Steps

  1. Clean the squid by removing the head, innards, and skin, then rinse thoroughly under cold water.
  2. Cut the squid into rings or leave whole if preferred.
  3. In a bowl, mix the lemon juice, fish sauce, minced garlic, salt, and black pepper to create a marinade.
  4. Add the squid to the marinade and let it sit for 15 minutes to absorb the flavors.
  5. Prepare a steaming pot by bringing water to a boil.
  6. Place a steaming rack in the pot and layer the sliced ginger on the rack.
  7. Arrange the marinated squid on top of the ginger slices.
  8. Cover the pot and steam the squid for about 10-12 minutes or until cooked through and opaque.
  9. Once done, remove from heat and carefully plate the squid, garnishing with fresh coriander leaves.
  10. Serve immediately with rice or as an appetizer.
