Ingredients

  • Mushrooms (shiitake or enoki) - 150 grams, sliced
  • Zucchini - 1 medium, sliced into thin rounds
  • Red bell pepper - 1 medium, sliced
  • Coconut milk - 400 ml
  • Chicken broth - 500 ml
  • Lemongrass - 1 stalk, bruised
  • Kaffir lime leaves - 3 leaves, torn
  • Thai red curry paste - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Fresh cilantro - for garnish
  • Lime - 1, juiced
  • Chili peppers - to taste, sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, combine chicken broth, coconut milk, lemongrass, kaffir lime leaves, and Thai red curry paste. Bring to a gentle boil over medium heat.
  2. Add the sliced chicken breast and cook for about 5-7 minutes until fully cooked.
  3. Stir in the shrimp and cook for an additional 3-4 minutes until they turn pink and opaque.
  4. Add the sliced mushrooms, zucchini, and red bell pepper to the pot and simmer for another 5 minutes until the vegetables are tender.
  5. Season the broth with fish sauce, lime juice, salt, and black pepper to taste. Adjust seasoning as desired.
  6. Remove from heat and discard the lemongrass and lime leaves.
  7. Serve hot in individual bowls, garnished with fresh cilantro and sliced chili peppers.
