- Zucchini - 1 medium, sliced into thin rounds
- Red bell pepper - 1 medium, sliced
- Coconut milk - 400 ml
- Chicken broth - 500 ml
- Lemongrass - 1 stalk, bruised
- Kaffir lime leaves - 3 leaves, torn
- Thai red curry paste - 2 tablespoons
- Fish sauce - 1 tablespoon
- Fresh cilantro - for garnish
- Lime - 1, juiced
- Chili peppers - to taste, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, combine chicken broth, coconut milk, lemongrass, kaffir lime leaves, and Thai red curry paste. Bring to a gentle boil over medium heat.
- Add the sliced chicken breast and cook for about 5-7 minutes until fully cooked.
- Stir in the shrimp and cook for an additional 3-4 minutes until they turn pink and opaque.
- Add the sliced mushrooms, zucchini, and red bell pepper to the pot and simmer for another 5 minutes until the vegetables are tender.
- Season the broth with fish sauce, lime juice, salt, and black pepper to taste. Adjust seasoning as desired.
- Remove from heat and discard the lemongrass and lime leaves.
- Serve hot in individual bowls, garnished with fresh cilantro and sliced chili peppers.
