  • Chicken or seafood broth - 500 ml
  • Coconut milk - 100 ml
  • Lemongrass - 1 stalk, chopped
  • Galangal - 10 grams, sliced
  • Kaffir lime leaves - 2 leaves, torn
  • Fish sauce - 2 tablespoons
  • Chili peppers - 1, sliced (adjust to taste)
  • Fresh coriander - for garnish
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, bring the chicken or seafood broth to a boil over medium heat.
  2. Add the chopped lemongrass, sliced galangal, and torn kaffir lime leaves to the pot.
  3. Let it simmer for about 5 minutes to infuse the flavors.
  4. Stir in the coconut milk and fish sauce, and season with salt and black pepper to taste.
  5. Add the fish fillet, shrimp, and squid to the broth and cook for about 5-7 minutes until the seafood is cooked through.
  6. Add the mushrooms and bok choy, and cook for another 3-4 minutes until the vegetables are tender.
  7. Adjust seasoning as necessary, and add sliced chili peppers for heat.
