Ingredients

  • Pork intestines - 300 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, minced
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon (or coconut aminos for keto)
  • Black pepper - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped for garnish
  • Lettuce leaves - 4 for serving

Steps

  1. Rinse the pork intestines thoroughly under cold water to clean them, then soak in vinegar water for 15 minutes, rinse again, and pat dry.
  2. In a mixing bowl, combine minced garlic, shallots, fish sauce, soy sauce, black pepper, paprika, lime juice, and olive oil to create the marinade.
  3. Cut the cleaned intestines into manageable lengths (about 10 cm each) and add to the marinade, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the marinated intestines onto skewers, making sure they are not too tightly packed.
  6. Grill the skewers for about 5-7 minutes on each side, or until they are nicely charred and cooked through.
  7. Once cooked, remove from the grill and let rest for a couple of minutes before serving.
  8. Serve the grilled intestines on a platter with lettuce leaves and garnish with fresh cilantro.
