- Soy sauce - 1 tablespoon (or coconut aminos for keto)
- Black pepper - 1 teaspoon
- Paprika - 1 teaspoon
- Lime juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped for garnish
- Lettuce leaves - 4 for serving
Steps
- Rinse the pork intestines thoroughly under cold water to clean them, then soak in vinegar water for 15 minutes, rinse again, and pat dry.
- In a mixing bowl, combine minced garlic, shallots, fish sauce, soy sauce, black pepper, paprika, lime juice, and olive oil to create the marinade.
- Cut the cleaned intestines into manageable lengths (about 10 cm each) and add to the marinade, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated intestines onto skewers, making sure they are not too tightly packed.
- Grill the skewers for about 5-7 minutes on each side, or until they are nicely charred and cooked through.
- Once cooked, remove from the grill and let rest for a couple of minutes before serving.
- Serve the grilled intestines on a platter with lettuce leaves and garnish with fresh cilantro.
