Ingredients

  • Pork shoulder - 400 grams
  • Garlic - 4 cloves, minced
  • Shallots - 2, finely chopped
  • Fish sauce - 2 tablespoons
  • Coconut sugar - 1 tablespoon
  • Paprika - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Fresh herbs (mint, cilantro, or basil) - for garnish

Steps

  1. Begin by cutting the pork shoulder into 2.5 cm thick slices.
  2. In a mixing bowl, combine minced garlic, chopped shallots, fish sauce, coconut sugar, paprika, black pepper, lime juice, and olive oil to create the marinade.
  3. Add the pork slices to the marinade, ensuring each piece is well-coated, and let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
  4. Preheat your grill or charcoal BBQ for medium-high heat.
  5. Thread the marinated pork slices onto skewers.
  6. Grill the skewers for about 4-5 minutes on each side, or until the pork is cooked through and slightly charred.
  7. Once cooked, remove from the grill and let rest for a few minutes.
  8. Serve the grilled pork garnished with fresh herbs and enjoy with your favorite dipping sauces.
