- Glutinous rice - 100 grams
- Coconut milk - 200 milliliters
- Sugar - 2 tablespoons
- Salt - 1/4 teaspoon
- Pandan leaves - 1-2 (for aroma, optional)
- Coconut ice cream - 2 scoops
- Sesame seeds - 1 tablespoon (toasted, for garnish)
- Fresh mango - 100 grams (diced, for garnish)
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and place it in a steamer lined with pandan leaves (if using) or cheesecloth.
- Steam the rice for about 20-25 minutes until it becomes tender and sticky.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over low heat. Stir until the sugar dissolves, then remove from heat.
- Once the rice is done, transfer it to a bowl and pour half of the coconut milk mixture over it. Mix well and let it sit for about 10 minutes to absorb the flavors.
- To serve, scoop the sticky rice into bowls, add a scoop of coconut ice cream on top, and drizzle with the remaining coconut milk mixture.
- Garnish with toasted sesame seeds and diced fresh mango before serving.
