Ingredients

  • Glutinous rice - 100 grams
  • Coconut milk - 200 milliliters
  • Sugar - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Pandan leaves - 1-2 (for aroma, optional)
  • Coconut ice cream - 2 scoops
  • Sesame seeds - 1 tablespoon (toasted, for garnish)
  • Fresh mango - 100 grams (diced, for garnish)

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and place it in a steamer lined with pandan leaves (if using) or cheesecloth.
  3. Steam the rice for about 20-25 minutes until it becomes tender and sticky.
  4. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over low heat. Stir until the sugar dissolves, then remove from heat.
  5. Once the rice is done, transfer it to a bowl and pour half of the coconut milk mixture over it. Mix well and let it sit for about 10 minutes to absorb the flavors.
  6. To serve, scoop the sticky rice into bowls, add a scoop of coconut ice cream on top, and drizzle with the remaining coconut milk mixture.
  7. Garnish with toasted sesame seeds and diced fresh mango before serving.
