Ingredients

  • Rice noodles - 200 grams
  • Vegetable broth - 1 liter
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Bean sprouts - 100 grams
  • Scallions - 3, chopped
  • Cilantro - 30 grams, chopped
  • Soy sauce (kosher) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Lime - 1, cut into wedges
  • Fresh chili (optional) - 1, sliced

Steps

  1. In a large pot, bring the vegetable broth to a boil over medium heat.
  2. Add the sliced mushrooms and julienned carrots to the broth, and simmer for about 5 minutes until the vegetables are tender.
  3. Meanwhile, cook the rice noodles according to package instructions, then drain and set aside.
  4. Once the vegetables are cooked, stir in the soy sauce and sesame oil, and let simmer for another 2 minutes.
  5. In serving bowls, place a portion of the cooked rice noodles.
  6. Ladle the hot broth and vegetables over the noodles.
  7. Garnish with bean sprouts, chopped scallions, cilantro, and fresh chili slices if desired.
  8. Serve with lime wedges on the side to squeeze over the soup for added freshness.
