Ingredients
- Hủ Tiếu noodles - 200 grams
- Chicken breast - 150 grams, thinly sliced
- Shrimp - 100 grams, peeled and deveined
- Egg - 1 large
- Garlic - 3 cloves, minced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Green onion - 2 stalks, chopped
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
Steps
- Soak Hủ Tiếu noodles in warm water for about 15 minutes or until soft, then drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and sauté until fragrant.
- Add the sliced chicken breast to the pan and stir-fry for about 5 minutes until cooked through.
- Add the shrimp to the pan and cook for another 2-3 minutes until they turn pink. Remove the chicken and shrimp from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Add the julienned carrot and sliced bell pepper, and stir-fry for 2-3 minutes until slightly tender.
- Push the vegetables to one side of the pan, crack the egg onto the other side, and scramble it until fully cooked.
- Add the soaked Hủ Tiếu noodles back into the pan along with the cooked chicken and shrimp.
- Pour in the soy sauce, oyster sauce, sesame oil, and black pepper. Toss everything together and stir-fry for another 3-4 minutes until heated through.
- Add the chopped green onions, toss again, and remove from heat.
- Serve hot, garnished with additional green onions if desired.
