Ingredients

  • Rice noodles - 150 grams
  • Chicken breast - 200 grams
  • Pork belly - 100 grams
  • Shrimp - 100 grams
  • Beef bones - 300 grams
  • Fish sauce - 3 tablespoons
  • Chicken or vegetable broth - 1 liter
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, sliced
  • Ginger - 1 tablespoon, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Bean sprouts - 100 grams
  • Green onions - 2 stalks, chopped
  • Lime - 1, cut into wedges
  • Chili peppers - 1-2, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, bring the beef bones and 1 liter of water to a boil. Reduce to a simmer and cook for 30 minutes to extract flavor.
  2. Add garlic, onion, ginger, and fish sauce to the pot. Simmer for another 15 minutes.
  3. Remove the beef bones and strain the broth to remove solids. Return the clear broth to the pot.
  4. Add the chicken breast and pork belly to the broth. Cook for 10 minutes until the chicken is cooked through.
  5. Add the shrimp and cook for an additional 3-5 minutes until they turn pink.
  6. Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
  7. To serve, place a portion of rice noodles in each bowl, ladle the hot broth and proteins over the noodles.
  8. Top with bean sprouts, cilantro, green onions, and serve with lime wedges and chili peppers on the side.
