Ingredients
- Rice noodles - 150 grams
- Chicken breast - 200 grams
- Pork belly - 100 grams
- Shrimp - 100 grams
- Beef bones - 300 grams
- Fish sauce - 3 tablespoons
- Chicken or vegetable broth - 1 liter
- Garlic - 3 cloves, minced
- Onion - 1 medium, sliced
- Ginger - 1 tablespoon, sliced
- Fresh cilantro - 1/4 cup, chopped
- Bean sprouts - 100 grams
- Green onions - 2 stalks, chopped
- Lime - 1, cut into wedges
- Chili peppers - 1-2, sliced (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, bring the beef bones and 1 liter of water to a boil. Reduce to a simmer and cook for 30 minutes to extract flavor.
- Add garlic, onion, ginger, and fish sauce to the pot. Simmer for another 15 minutes.
- Remove the beef bones and strain the broth to remove solids. Return the clear broth to the pot.
- Add the chicken breast and pork belly to the broth. Cook for 10 minutes until the chicken is cooked through.
- Add the shrimp and cook for an additional 3-5 minutes until they turn pink.
- Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
- To serve, place a portion of rice noodles in each bowl, ladle the hot broth and proteins over the noodles.
- Top with bean sprouts, cilantro, green onions, and serve with lime wedges and chili peppers on the side.
