Ingredients

  • Pork belly - 100 grams
  • Shrimp - 100 grams, peeled and deveined
  • Chicken breast - 100 grams, sliced
  • Mushrooms - 50 grams, sliced
  • Cauliflower - 200 grams, grated (to substitute for noodles)
  • Chicken broth - 800 ml
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Shallots - 1, finely chopped
  • Green onions - 2, chopped
  • Fresh cilantro - a handful, chopped
  • Black pepper - to taste
  • Chili slices - to taste (optional)

Steps

  1. In a large pot, heat a little oil over medium heat and sauté the minced garlic and chopped shallots until fragrant.
  2. Add the pork belly and chicken breast to the pot, cooking until the meat is browned on all sides.
  3. Pour in the chicken broth, then add the fish sauce and soy sauce. Bring to a boil and then reduce to a simmer for 15 minutes.
  4. Add the shrimp and sliced mushrooms to the pot, cooking for an additional 5 minutes until shrimp is pink and cooked through.
  5. While the broth is simmering, steam the grated cauliflower for about 5-7 minutes until tender but not mushy.
  6. To serve, place the steamed cauliflower in a bowl, ladle the broth and meats over it, and garnish with chopped green onions, cilantro, and chili slices if desired.
