- Pork belly - 100 grams
- Shrimp - 100 grams, peeled and deveined
- Chicken breast - 100 grams, sliced
- Mushrooms - 50 grams, sliced
- Cauliflower - 200 grams, grated (to substitute for noodles)
- Chicken broth - 800 ml
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Shallots - 1, finely chopped
- Green onions - 2, chopped
- Fresh cilantro - a handful, chopped
- Black pepper - to taste
- Chili slices - to taste (optional)
Steps
- In a large pot, heat a little oil over medium heat and sauté the minced garlic and chopped shallots until fragrant.
- Add the pork belly and chicken breast to the pot, cooking until the meat is browned on all sides.
- Pour in the chicken broth, then add the fish sauce and soy sauce. Bring to a boil and then reduce to a simmer for 15 minutes.
- Add the shrimp and sliced mushrooms to the pot, cooking for an additional 5 minutes until shrimp is pink and cooked through.
- While the broth is simmering, steam the grated cauliflower for about 5-7 minutes until tender but not mushy.
- To serve, place the steamed cauliflower in a bowl, ladle the broth and meats over it, and garnish with chopped green onions, cilantro, and chili slices if desired.
