Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 200 grams, thinly sliced
  • Pork belly - 100 grams, thinly sliced
  • Chicken broth - 500 ml, low sodium
  • Garlic - 2 cloves, minced
  • Onion - 1 small, sliced
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon, low sodium
  • Black pepper - 1 teaspoon
  • Chili oil - 1 tablespoon
  • Cilantro - 1/4 cup, chopped
  • Green onions - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Bean sprouts - 50 grams, optional for garnish

Steps

  1. Heat a large pot over medium heat and add the pork belly. Cook until crispy, then remove and set aside, leaving the fat in the pot.
  2. In the same pot, add the sliced chicken breast and cook until no longer pink. Add the minced garlic and sliced onion, sautéing until fragrant.
  3. Pour in the chicken broth, fish sauce, soy sauce, and black pepper. Bring to a simmer and let cook for about 10 minutes.
  4. Meanwhile, in a separate pan, sauté the spiralized zucchini noodles in chili oil for about 2-3 minutes until slightly tender but still firm.
  5. To serve, divide the zucchini noodles between two bowls, ladle the broth and chicken mixture over the noodles, and top with crispy pork belly.
  6. Garnish with chopped cilantro, green onions, and lime wedges. Add bean sprouts if desired.
