Ingredients
- Zucchini - 2 medium, spiralized
- Chicken breast - 200 grams, thinly sliced
- Pork belly - 100 grams, thinly sliced
- Chicken broth - 500 ml, low sodium
- Garlic - 2 cloves, minced
- Onion - 1 small, sliced
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon, low sodium
- Black pepper - 1 teaspoon
- Chili oil - 1 tablespoon
- Cilantro - 1/4 cup, chopped
- Green onions - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Bean sprouts - 50 grams, optional for garnish
Steps
- Heat a large pot over medium heat and add the pork belly. Cook until crispy, then remove and set aside, leaving the fat in the pot.
- In the same pot, add the sliced chicken breast and cook until no longer pink. Add the minced garlic and sliced onion, sautéing until fragrant.
- Pour in the chicken broth, fish sauce, soy sauce, and black pepper. Bring to a simmer and let cook for about 10 minutes.
- Meanwhile, in a separate pan, sauté the spiralized zucchini noodles in chili oil for about 2-3 minutes until slightly tender but still firm.
- To serve, divide the zucchini noodles between two bowls, ladle the broth and chicken mixture over the noodles, and top with crispy pork belly.
- Garnish with chopped cilantro, green onions, and lime wedges. Add bean sprouts if desired.
