Ingredients

  • Hủ tiếu noodles - 200 grams
  • Shrimp - 100 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Fish fillet (white fish) - 100 grams, cut into bite-sized pieces
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Ginger - 1-inch piece, thinly sliced
  • Fish sauce - 2 tablespoons
  • Vegetable broth - 750 ml
  • Lime - 1, juiced
  • Fresh cilantro - a handful, chopped
  • Green onions - 2, chopped
  • Bean sprouts - 100 grams
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat a tablespoon of oil over medium heat and sauté the minced garlic and sliced shallots until fragrant.
  2. Add the sliced ginger and cook for another minute.
  3. Pour in the vegetable broth and bring to a boil.
  4. Stir in the fish sauce and season with salt and black pepper to taste.
  5. Once boiling, add the shrimp, squid, and fish fillet. Cook until the seafood is opaque and cooked through, about 3-5 minutes.
  6. Meanwhile, cook the hủ tiếu noodles according to package instructions. Drain and set aside.
  7. To serve, place a portion of cooked noodles in a bowl, ladle the seafood broth over the noodles, and top with bean sprouts, chopped cilantro, green onions, and sliced red chili if desired.
  8. Finish with a squeeze of lime juice before enjoying.
