Steps
- Start by soaking the rice noodles in warm water for 30 minutes until softened, then drain and set aside.
- In a pot, heat the cooking oil over medium heat and sauté the minced garlic and chopped shallots until fragrant, about 2-3 minutes.
- Add the chicken broth and water to the pot, bringing it to a simmer.
- Stir in the fish sauce, lime juice, black pepper, and salt to taste.
- Once the broth is simmering, gently add the fresh crab meat, allowing it to cook for about 5 minutes.
- In the last few minutes of cooking, add the softened rice noodles to the broth and stir gently to combine.
- Remove the pot from heat and serve the soup in bowls, topped with bean sprouts, chopped spring onions, cilantro, and sliced red chili.
