  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Spring onions - 2, chopped
  • Cilantro - 1/4 cup, chopped
  • Bean sprouts - 100 grams
  • Red chili - 1, sliced
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Cooking oil - 1 tablespoon

Steps

  1. Start by soaking the rice noodles in warm water for 30 minutes until softened, then drain and set aside.
  2. In a pot, heat the cooking oil over medium heat and sauté the minced garlic and chopped shallots until fragrant, about 2-3 minutes.
  3. Add the chicken broth and water to the pot, bringing it to a simmer.
  4. Stir in the fish sauce, lime juice, black pepper, and salt to taste.
  5. Once the broth is simmering, gently add the fresh crab meat, allowing it to cook for about 5 minutes.
  6. In the last few minutes of cooking, add the softened rice noodles to the broth and stir gently to combine.
  7. Remove the pot from heat and serve the soup in bowls, topped with bean sprouts, chopped spring onions, cilantro, and sliced red chili.
