Goi Ga

Ingredients
- Chicken breast - 200 grams
- Cabbage, shredded - 100 grams
- Carrot, julienned - 50 grams
- Cucumber, julienned - 50 grams
- Fresh cilantro, chopped - 20 grams
- Fresh mint, chopped - 10 grams
- Lime juice - 30 ml
- Fish sauce (or kosher substitute) - 15 ml
- Sugar - 5 grams
- Garlic, minced - 1 clove
- Red chili, sliced - 1 small (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, bring water to a boil and add the chicken breast. Reduce to a simmer and cook for about 15-20 minutes until fully cooked. Remove from water and let cool, then shred the chicken.
- In a large bowl, combine the shredded chicken, shredded cabbage, julienned carrot, julienned cucumber, chopped cilantro, and mint.
- In a separate small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and sliced chili (if using). Adjust seasoning with salt and black pepper.
- Pour the dressing over the salad and toss well to combine. Adjust seasoning if necessary.
- Serve immediately, garnished with additional herbs if desired.
