Ingredients

  • Chicken breast - 200 grams
  • Cabbage, shredded - 100 grams
  • Carrot, julienned - 50 grams
  • Cucumber, julienned - 50 grams
  • Fresh cilantro, chopped - 20 grams
  • Fresh mint, chopped - 10 grams
  • Lime juice - 30 ml
  • Fish sauce (or kosher substitute) - 15 ml
  • Sugar - 5 grams
  • Garlic, minced - 1 clove
  • Red chili, sliced - 1 small (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, bring water to a boil and add the chicken breast. Reduce to a simmer and cook for about 15-20 minutes until fully cooked. Remove from water and let cool, then shred the chicken.
  2. In a large bowl, combine the shredded chicken, shredded cabbage, julienned carrot, julienned cucumber, chopped cilantro, and mint.
  3. In a separate small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and sliced chili (if using). Adjust seasoning with salt and black pepper.
  4. Pour the dressing over the salad and toss well to combine. Adjust seasoning if necessary.
  5. Serve immediately, garnished with additional herbs if desired.
