Ingredients

  • Ground kosher pork - 300 grams
  • Fish sauce (kosher) - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Shallots, finely chopped - 2 tablespoons
  • Black pepper, ground - 1 teaspoon
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Water - 50 ml
  • Banana leaves (for wrapping) - 2 large pieces

Steps

  1. In a mixing bowl, combine the ground kosher pork, fish sauce, minced garlic, chopped shallots, black pepper, sugar, and salt. Mix thoroughly until the ingredients are well incorporated.
  2. Gradually add water to the mixture, continuing to mix until the texture becomes smooth and slightly sticky.
  3. Prepare the banana leaves by briefly passing them over an open flame or boiling water to make them pliable.
  4. Place a portion of the pork mixture onto a piece of banana leaf and shape it into a log. Wrap the banana leaf tightly around the mixture and secure it with kitchen twine or toothpicks.
  5. Repeat the wrapping process with the remaining mixture. You should have two logs.
  6. Fill a steamer pot with water and bring it to a boil. Place the wrapped logs in the steamer and cover with a lid.
  7. Steam the logs for about 45 minutes, or until the pork is fully cooked and firm to the touch.
  8. Remove the logs from the steamer and let them cool for a few minutes before unwrapping.
  9. Slice the Gio Lua into rounds and serve with fresh herbs and dipping sauce.
