Ingredients

  • Boneless chicken thighs - 300 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Soy sauce (Kosher) - 3 tablespoons
  • Fish sauce (Kosher) - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Ground black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro - 30 grams, for garnish
  • Lettuce leaves - 4, for serving
  • Sliced cucumber - 100 grams, for serving
  • Chili sauce - 2 tablespoons, for dipping

Steps

  1. In a mixing bowl, combine minced garlic, chopped shallots, soy sauce, fish sauce, brown sugar, lime juice, ground black pepper, and vegetable oil to create the marinade.
  2. Add the boneless chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and place it on the hot grill. Cook for about 6-8 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. Serve the sliced grilled chicken on a plate with fresh lettuce leaves, sliced cucumbers, and a side of chili sauce for dipping. Garnish with fresh cilantro.
