Steps
- In a mixing bowl, combine minced garlic, chopped shallots, soy sauce, fish sauce, brown sugar, lime juice, ground black pepper, and vegetable oil to create the marinade.
- Add the boneless chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.
- Preheat a grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and place it on the hot grill. Cook for about 6-8 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
- Serve the sliced grilled chicken on a plate with fresh lettuce leaves, sliced cucumbers, and a side of chili sauce for dipping. Garnish with fresh cilantro.
