- Vegetables (broccoli, bell pepper, zucchini) - 300 grams, cut into bite-sized pieces
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine minced garlic, shallots, ginger, fish sauce, soy sauce, lime juice, chili powder, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
- In a large oven-proof skillet, heat coconut oil over medium-high heat. Once hot, add the marinated chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
- Flip the chicken thighs over and add the chopped vegetables around the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the vegetables are tender.
- Remove from the oven, let rest for 5 minutes, then garnish with fresh cilantro before serving.
