  • Coconut oil - 2 tablespoons
  • Fresh cilantro - for garnish
  • Vegetables (broccoli, bell pepper, zucchini) - 300 grams, cut into bite-sized pieces

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine minced garlic, shallots, ginger, fish sauce, soy sauce, lime juice, chili powder, and black pepper to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. In a large oven-proof skillet, heat coconut oil over medium-high heat. Once hot, add the marinated chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
  5. Flip the chicken thighs over and add the chopped vegetables around the chicken in the skillet.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the vegetables are tender.
  7. Remove from the oven, let rest for 5 minutes, then garnish with fresh cilantro before serving.
