- Black pepper - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Lime - 1, juiced
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the chopped lemongrass, minced garlic, fish sauce, soy sauce, olive oil, black pepper, coriander powder, salt, and lime juice to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes.
- Place the marinated chicken thighs on a baking sheet lined with parchment paper, skin side up.
- Bake in the preheated oven for 30-35 minutes or until the chicken is golden brown and cooked through, reaching an internal temperature of 75°C (165°F).
- Once done, remove from the oven and let it rest for 5 minutes.
- Garnish with fresh cilantro before serving.
