  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon (or tamari for gluten-free)
  • Olive oil - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Lime - 1, juiced
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the chopped lemongrass, minced garlic, fish sauce, soy sauce, olive oil, black pepper, coriander powder, salt, and lime juice to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes.
  4. Place the marinated chicken thighs on a baking sheet lined with parchment paper, skin side up.
  5. Bake in the preheated oven for 30-35 minutes or until the chicken is golden brown and cooked through, reaching an internal temperature of 75°C (165°F).
  6. Once done, remove from the oven and let it rest for 5 minutes.
  7. Garnish with fresh cilantro before serving.
