Ingredients

  • Chicken thighs - 500 grams
  • Garlic - 4 cloves, minced
  • Fish sauce - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Cornstarch - 1/4 cup
  • Rice flour - 1/4 cup
  • Vegetable oil - for frying
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, combine minced garlic, fish sauce, soy sauce, lime juice, and black pepper to make the marinade.
  2. Add the chicken thighs to the marinade, ensuring they're well-coated. Cover and refrigerate for at least 30 minutes.
  3. In a separate bowl, mix the cornstarch and rice flour together.
  4. Heat vegetable oil in a deep pan over medium-high heat.
  5. Remove the chicken from the marinade, allowing excess marinade to drip off, then dredge the chicken in the flour mixture until fully coated.
  6. Fry the chicken in batches for about 8-10 minutes on each side, or until golden brown and cooked through (internal temperature should reach 75°C).
  7. Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.
  8. Garnish with fresh cilantro and serve hot with steamed rice and vegetables.
