Ingredients
- Chicken thighs - 500 grams
- Garlic - 4 cloves, minced
- Fish sauce - 3 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Black pepper - 1 teaspoon
- Cornstarch - 1/4 cup
- Rice flour - 1/4 cup
- Vegetable oil - for frying
- Fresh cilantro - for garnish
Steps
- In a bowl, combine minced garlic, fish sauce, soy sauce, lime juice, and black pepper to make the marinade.
- Add the chicken thighs to the marinade, ensuring they're well-coated. Cover and refrigerate for at least 30 minutes.
- In a separate bowl, mix the cornstarch and rice flour together.
- Heat vegetable oil in a deep pan over medium-high heat.
- Remove the chicken from the marinade, allowing excess marinade to drip off, then dredge the chicken in the flour mixture until fully coated.
- Fry the chicken in batches for about 8-10 minutes on each side, or until golden brown and cooked through (internal temperature should reach 75°C).
- Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.
- Garnish with fresh cilantro and serve hot with steamed rice and vegetables.
