- Chicken thighs - 500 grams, bone-in, skin-on
- Fish sauce - 3 tablespoons
- Garlic - 4 cloves, minced
- Black pepper - 1 teaspoon
- Coconut flour - 50 grams
- Egg - 1 large, beaten
- Oil for frying - 200 ml
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
Steps
- In a mixing bowl, combine fish sauce, minced garlic, and black pepper. Add the chicken thighs and marinate for at least 30 minutes, preferably in the refrigerator.
- Once marinated, coat each chicken thigh in coconut flour, ensuring an even layer. Dip the floured chicken into the beaten egg, allowing excess to drip off.
- Heat oil in a large frying pan over medium-high heat. Once hot, carefully add the coated chicken thighs, skin side down, and fry for about 6-8 minutes until golden brown.
- Flip the chicken and fry for another 6-8 minutes until the internal temperature reaches 75°C (165°F) and the chicken is crispy.
- Remove the fried chicken from the pan and place on a paper towel-lined plate to absorb excess oil. Sprinkle with chopped cilantro before serving.
- Serve hot with lime wedges on the side for an added zesty flavor.
