Ingredients

  • Chicken thighs - 500 grams, bone-in, skin-on
  • Fish sauce - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Black pepper - 1 teaspoon
  • Coconut flour - 50 grams
  • Egg - 1 large, beaten
  • Oil for frying - 200 ml
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a mixing bowl, combine fish sauce, minced garlic, and black pepper. Add the chicken thighs and marinate for at least 30 minutes, preferably in the refrigerator.
  2. Once marinated, coat each chicken thigh in coconut flour, ensuring an even layer. Dip the floured chicken into the beaten egg, allowing excess to drip off.
  3. Heat oil in a large frying pan over medium-high heat. Once hot, carefully add the coated chicken thighs, skin side down, and fry for about 6-8 minutes until golden brown.
  4. Flip the chicken and fry for another 6-8 minutes until the internal temperature reaches 75°C (165°F) and the chicken is crispy.
  5. Remove the fried chicken from the pan and place on a paper towel-lined plate to absorb excess oil. Sprinkle with chopped cilantro before serving.
  6. Serve hot with lime wedges on the side for an added zesty flavor.
